“Spaghetti with courgettes, basil and lemon” from “Good Things to Eat”

Tom: Mmm… yum  AGAIN! This man can do no wrong!

Kirstin: This man is the perfect combination of Jamie and Nigel. And he clearly enjoys his food. I just looked up the recipe we used to use for courgette pasta, and this one is much easier, and much yummier.

Tom: I agree. What made this recipe easier?

Kirstin: I didn’t have to grate the courgette — just slice it. This was a very quick meal. Yummy and healthy; it was vegetarian. More!

Tom: He says in the recipe, ‘There are people who claim not to like courgettes. I’m guessing they were traumatised by mushiness in early life. This fragrant supper could well prove to be the cure.’ And he’s right. I had to eat ratatouille for an entire summer in 1976. But I’d happily have this again!

Kirstin: What were our mothers reading that made them cook ratatouille? I had a summer of being subjected to ratatouille in the late seventies too…

Tom: I don’t know. We should do 70s month on this blog! Actually, on second thoughts…

Kirstin: No. What would we eat? Fondue? Prawn cocktails? And have key parties? We’re not doing that. And everyone listened to The Carpenters, and the Bee Gees.

Tom: What’s for dinner tomorrow? Another recipe from our man Lucas?

Kirstin: Oh, yessssss!
